Storage and Use of Ice Products

All Canberra Ice products need to be tempered before use. If ice is used directly from the freezer (-15 to -20 degrees centigrade) it will crack when food or liquid is applied. Removing ice from the freezer before use will ensure products don't crack, and any carved or stamped products will reveal more details when they approach ambient temperature.

Ice cubes/spears   

Are safe when allowed to temper for 10 minutes before use. Many businesses set their under-bar freezers to a warmer temperature (approx -10) for almost instant use.

Ice glasses

Again, 10 minutes to temper is the magic number for safe use. Setting a warmer freezer temp speeds-up the process.

Ice buckets/bowls

Being thicker than ice cubes or glasses, ice buckets and bowls require a little more time to temper. Allow 45 minutes to 1 hour to temper if stored between -15 and -20 degrees. Be sure to place any table decorations on  a drip-tray. The tray should not need emptying over a 5hr function.

Large Ice displays 

Large ice carvings over 30cm thick must be placed in a room at least 1 hour before guests / clients arrive. This time allows the ice to temper so it can be touched without cracking. Again, this time allows for frosting to disappear, and liquids or food to be placed on the ice with causing damage.
